Burgers and Sandwiches
Tuna Avocado Melt

Ingredients:
1 - 6 ounce can of water-packed
tuna, drained
2 tablespoons mayonnaise
1 tablespoon of fresh minced onion
2 teaspoons of chopped jalapeno pepper (canned or jar)
2 ounces of cheddar cheese, sliced thin
1/2 ripe avocado, sliced
4 slices of multi-grain bread
butter, softened (about 1 quarter stick)

In a small bowl, flake the drained tuna and combine it with the
mayo, the onion and the jalapeno. Set the mixture aside.
Top 2 slices of the multi-grain bread evenly with half of the
cheddar cheese and then the avocado. Spoon half of the tuna mixture over each piece of bread. Put the rest of the
cheese on top of the tuna on each bread slice and put the other slices of bread on top of that.
Use a butter knife to spread some of the softened butter on top of
each sandwich and place the sandwiches, butter side down, in a large non-stick skillet or on a non-stick
griddle preheated to medium heat.
Spread butter on top of the other side of the sandwich (you can put
the butter on both sides before you put the sandwiches in the skillet, but this will keep them from making a mess
and smearing butter everywhere).
Cook the sandwiches until they are golden brown on the bottom.
This should take about 2 minutes. Turn them over and cook until the other side is golden and the cheddar
cheese has melted. Be careful not to burn them. Butter burns easily on too high heat. Reduce it a little if
you need to.
The tuna avocado melts are easier to eat if you cut them in half
before serving. Cutting them diagonally makes them more attractive.
This sandwich goes well served with corn tortilla chips and salsa.
