Low Carb Swiss Steak

Ingredients:
2 pounds round or chuck steak approx 1/2"
thick
1 large can Del Monte Stewed Tomatoes
1/2 can no carb beef boullion or 1 cube 0 carb beef
boullion
1 medium onion sliced
2 green bell peppers seeded and sliced into quarters
salt, pepper and garlic to taste

Cut steak into serving sized pieces. Remove all
visible fat. Pound with a meat mallet if you prefer to make it more tender. You can also poke holes in it and rub
sugarless meat tenderizer into it. Brown on both sides and place into a seasoned cast iron skillet or you favorite
coverable cooking utensile. Heat to medium high. Add 1/2 can bouillon, then top with tomatoes, then onion slices,
then green pepper slices. Cover tightly and simmer over low heat until steak is fork tender - 1 1/2 to 2
hours.
The fiber in the tomatoes, onions and peppers really
reduce the actual carb count of the recipe. Serve with string beans if you like an additional vegetable, but this
is pretty much a well rounded meal in itself. This is also a good recipe for the crock pot.
