Easy Casseroles
SpaghettiRoni Casserole

Ingredients:
1 pound of lean ground beef
1 4-ounce can of mushrooms, drained
1 small green bell pepper, seeded and chopped
1 medium onion, peeled and chopped
1 26-ounce jar of your favorite pasta sauce
1 8-ounce can of tomato sauce
1 teaspoon of Italian seasoning (or your own mixture of oregano, rosemary, etc)
1 16-ounce package of uncooked spaghetti, broken into small pieces
3/4 cup of milk
2 large eggs, slightly beaten
1 5-ounce package of sliced pepperoni
2 cups of shredded Monterey Jack cheese
1-1/2 cups of shredded Cheddar cheese
Parmesan cheese (optional)

Spaghettironi Casserole, or spaghetti bake with pepperoni, is a kid and crowd pleaser.
Preheat the oven to 350 degrees.
In a large skillet, start browning the ground beef over medium high heat. Add the mushrooms, bell
pepper and onions and continue cooking until the meat is brown. Drain the skillet once after the grease
accumulates, returning it back to the heat.
While the beef is cooking, bring the spaghetti pieces to a boil in a big pot of water and cook it
accoding to the directions on the package. Drain it and rinse it under cool water to stop the cooking.
Add the tomato sauce, the pasta sauce and the Italian seasoning to the browned meat and mix it
well. Allow it to simmer for about 15 or 20 minutes.
Mix the milk and eggs together in a large bowl. Add the cooked spaghetti to this mixture and toss
it so that it gets covered.
Get out a large baking dish and gently spray it with non-stick cooking spray. Put half of the
spaghetti, milk and egg mixture into the bottom of the pan, then put half of the meat sauce over the top of that.
Do that again to make a total of two layers.
Cover the top of the casserole with aluminum foil and bake it in the oven for 45 minutes. Remove
the foil from the top of the baking dish and sprinkle the Monterey Jack and Cheddar cheeses evenly over the top and
place the pepperoni slices on evenly as well. Stick it back in the oven and cook it until the cheese has completely
melted (about 10 minutes or so).
Let it cool a few minutes before serving. Sprinkle the top with some Parmesan cheese if you like.
Get out the garlic bread and serve.
