Red White and Blue Help For Diabetics
It’s a holiday, and you know what that means! For
most of us our diet just flies out the window. Tables loaded with grilled meat, trays of buns and rolls, potato
salad, chips and more chips, beer and soda... and let’s not forget the red, white and blue cake for
dessert!
For some of us this is just a bad diet day, but for
those out there with diabetes this could mean a lot more than that.
So, are you helpless in the face of the holiday
eating pressure? No! I found this article with some tips on a few simple things to do in the face of the snack
table and dessert buffet.

to make this morning to take to that barbeque tonight. So don’t despair and resign yourself to either a bad
health day or a day of denying yourself something yummy - go to the store and pick up some ingredients and get
to the kitchen quick!
Low Carb 4th of July Cheescake
Recipe
Ingredients: 1 cup vanilla wafer
crumbs 4 tbsp margarine - melted 3 tbsp nutrasweet - spoonful 1 env. (1/4 oz.) unflavored gelatin 1 cup
skim milk 2 package 8 oz. each - reduced fat cream cheese - softened 1 package 3 oz. - reduced fat cream
cheese -, softened 2 tbsp lemon juice 1 tbsp grated lemon rind 2 tsp vanilla extract 1/3 cup to 1/2 cup
nutrasweet spoonful 1 pt blueberries 2 pt raspberries
Preparation:
This recipe came from a cookbook that you can
get by calling the NutraSweet/Equal Company. The cookbook is THE NUTRASWEET SPOONFUL RECIPE
COLLECTION.
1. Mix crumbs, margarine and the 3 tbsp.
NutraSweet Spoonful in medium bowl; pat evenly on bottom of jelly roll pan, 15 x 10 inches.
2. Sprinkle gelatin over milk in small saucepan; let stand 2 to 3
minutes.
Heat over medium low heat, stirring constantly, until gelatin is dissolved. Cool
to room temperature.
3. Beat cream cheese until fluffy in large bowl; gradually beat in milk mixture.
Beat in lemon juice and rind, vanilla and 1/3 to 1/2 cup NutraSweet Spoonful. Pour mixture over crust;
refrigerate until set, 3 to 4 hours.
4. Before serving, decorate to look like a flag, using the blueberries for the
stars, and the raspberries for the stripes. Yield: 16 servings.
