Easy Egg Recipes
Pizza Omelet

Ingredients:
1-2 Tbsp butter
3 eggs
8-10 pepperoni slices
3-4 slices of fresh mushroom
1-2 Tbsp diced green bell pepper
1-2 Tbsp coarsely chopped red onion
2-4 Tbsp favorite pizza or marinara
sauce
1/4 to 1/2 c
mozzarella cheese 1-2 Tbsp
parmesan cheese
salt and pepper to taste
Amounts are vague because tastes vary. Use
your creativity to determine how much you like. Also, add some of your other
favorite pizza toppings if you want, like ground pork, Italian
sausage or Canadian bacon.

Melt the butter in an omelet-sized pan and make sure it spreads evenly. While the butter is melting, break and beat
the three eggs. Don't beat them until frothy, just until blended. Pour them into the pan. As the omelet sets, lift
the edges to allow the running yolk to slide under the omelet. When it is about half-way set, add the other
ingredients down to the pizza sauce. After those ingredients are evenly placed on the omelet, evenly pour 1/2 of
the spaghetti sauce on. Eyeball it so you don't get too much. Sprinkle half of the mozzarella cheese evenly over
that, and then fold the omelet. Place the other half of the sauce on top of the folded omelet, then the parmesan
cheese, and then the other half of the mozzarella. Cover with a lid for a moment until the cheese melts and serve.
Serves one big eater or two wimps.
