Low Carb Fried Chicken (2 variations)

Fried Chicken Variation One

1 whole frier chicken cut-up
Oil for frying

This one is real simple. Just place the chicken in a heavy frying pan and cover about 1/2 way with cooking oil. Fry uncovered (medium high heat) until golden on the bottom then turn and cook until golden on the other side. The skin makes a nice crispy coating and helps with some of those fried chicken cravings. Has 0 carbs.

Fried Chicken Variation Two

1 whole frier chicken cut-up
1 to 2 large bags of pork rinds
3-4 eggs
Oil for frying



 Crush the pork rinds in a blender or with a roller. Make sure they are broken down completely. Discard any hard chunks. Place the crushed rinds in a mixing bowl or something large enough to coat chicken pieces.

Break the eggs and beat until fairly well mixed, but not frothy.

Dip the chicken pieces in the eggs then in the pork rinds. Make sure they are covered well. Place them in the hot oil (enough to cover about half way) and fry until golden on one side, then turn over and fry until golden on the other.

This is a very rich recipe but it has only trace carbs. Sure to please your taste buds. Serve with a nice low carb salad and vegetable.
