Basic Ham and Cheese Omelet


Ingredients:

2 Tbsp butter
3 large eggs
pinch of salt
2 ounces of ham, chopped
2 ounces of you favorite cheese, shredded

Optional ingredients:

chopped green chili, jalapeno, bell pepper, mushrooms, onions or anything you like;
fresh uncooked tomato or picante sauce;
most any steamed and chopped vegetables;
bacon, bacon bits or sausage

Melt the butter in an 8 or 10 inch skillet on medium or medium low. Add the salt to the eggs, and the use a fork to break down the eggs until smooth but not frothy. Move the skillet around to make sure the butter covers the bottom. Pour the eggs into the skillet and move the skillet around to make sure the eggs cover the bottom. Cover with a lid.

If you haven't done so yet, shred the cheese and chop the ham, as well as any other ingredients you choose. When the eggs have cooked a little in the pan -- when it looks like they are about half-way done -- add all the other ingredients and top with the cheese. Cover again and check in a minute or two. When the cheese is melted and the eggs are no longer runny, use a spatula to gently fold one half over the other. Cover again for about one minute and serve.

Omelets are always great served with toast, bacon, sausage, potatoes, avocado slices or whatever favorite you like for breakfast.
