Fried
Chinese Wontons
1 lb stored bought Won Ton
wrapping
1/2 lb fresh ground pork
1/2 lb fresh prawns
4 dried mushrooms, soaked 2 hours
8 finely chopped water chestnuts
2 stalks finely chopped green onions
2 small eggs, beaten
1/4 tsp black pepper
1 1/2 tsp salt |
Shell and
devein prawns. Mince fine. Stem mushrooms and mince caps. Mix
with prawns, pork, water chestnuts, green onions, half of the
beaten eggs and all of the seasonings.
WRAPPING:
Place won ton squares on working surface so corners face up,
down, left and right. Place 1 teaspoon filling in the center of
each skin. Dip a little of the beaten egg onto the bottom
corner, bring top corner to meet bottom corner. Press to seal.
Moisten left corner and bring right corner to meet it. Press to
seal.
FRYING: Heat 4
cups oil in a hot wok. Fry wrapped won ton until golden brown
(about 2 minutes), turning over once. Drain and serve
hot.
You can also
fry these up, cool them and freeze them for later use. Whe you
are ready for them, just reheat them in a 350 degree oven on a
cookie sheet for 10 to 15 minutes (watch them
closely).
As an
alternative, you can try various other ground meats in them,
such as ground turkey, chicken and beef. If you choose to go
with the turkey or chicken, add a few more water chestnuts to
moisten the meat. Great served as an appetizer or a side
dish.
