Broccoli and Mushroom
Dip
Ingredients
2 cups broccoli, chopped
1 tbsp olilve oil
1 garlic clove
1/2 onion, chopped
1/4 lb mushrooms, chopped
3/4 cup low fat cottage cheese
1/4 cup low fat plain yogurt
1 pinch salt and pepper |
Drop the broccoli into boiling water and cook
just until tender-crisp, about 3 minutes. Drain and put under
cold water.
In a nonstick skillet, heat oil over medium
heat. Add the garlic, onion and mushrooms and cook until onion
is tender. Set aside.
Combine the cottage cheese and yogurt in a
blender. Season with salt and pepper to taste. Process just
until mixed. Cover and refrigerate. Makes about 2 1/2
cups.
