Beef Corn Casserole

 

4 tbsp oil
18 oz beef roast, not too lean
1 garlic clove
2 onions
2 tsp hot paprika
1 red bell pepper
1 green bell pepper
9 oz carrots
1 leek
2 qts clear broth
2 c uncooked rice
2 can whole kernal corn
1/2 tsp salt
1 tsp pepper
1 bun Parsley, chopped


 

Let the oil get hot in a big pot. Cut the meat into cubes and brown in the oil for about 20 minutes.

In the meantime, peel the onion and garlic clove and chopped finely.

Clean the leek, carrots and the peppers and dice finely.

Add the vegetables to meat and saute shortly, then pour in the broth. Let it come to a boil. Add the rice and let it all simmer 20 minutes.

Add the corn and let simmer for another 10 minutes. Season to taste and add the parsley.

Serve with a hearty bread.
