Easy Bar-B-Que Chicken

Ingredients:
2 to 3 pounds of your favorite chicken parts, cleaned
2 cups of your favorite bar-b-cue sauce, more or less as
needed
salt and pepper to taste

One of the tricks to making good barbecue is to not burn the sauce, so we're going to add that
later. But first, you want to preheat your grill.
Depending on the chicken parts you use, and the heat of the fire, and how close
you have your rack set to the fire, you may want to move the chicken off to a side of the grill away from the heat
and close the cover to the grill. Chicken tends to cook too fast on the outside and not fast enough on the inside,
and you don't want to end up with raw chicken.
If you are using smaller pieces, like wings or legs, you might be able to cook
them right over the heat, especially if the rack is not too close to the fire.
Okay, you don't want to put the barbecue sauce on right away. It may burn in
the heat and taste bitter. So, put the chicken pieces on the grill and let them cook awile until they are almost
done, then add the bar-b-cue sauce.
You will know it's time to add the sauce when you stick a sharp knife into the
center of the thickest part of the chicken and the juices are starting to run clear - try to get to them before
they run clear because you want to cook them awhile longer with the sauce.
Use a basting brush to coat the top and bottom of the chicken with the bar-b-que
sauce. Be liberal with it. Turn it often after you put on the sauce and watch it to make sure it doesn't burn. It's
okay to have a few blackened spots, but you don't want the whole piece black.
After the sauce is meshing well with the chicken and it appears to be done, cut
into one of the pieces. Barbecue chicken will sometimes look pink on the inside, but you don't want it bloody.
You're whole cooking time should be around 30 minutees.
Good ideas for side dishes with your barbecue chicken is baked beans and cole
slaw. Also, corn on the cob would be nice.
