Banana Custard Pie with Chocolate Crust


Ingredients:

The Crust

1 store-bought or homemade graham cracker pie crust, chocolate

NOTE: can use any chocolate crust, doesn't have to be graham cracker but has to be prepared

The Other Goodies

2 Tbps of white sugar
2 Tbsp of regular white flour
1/8 tsp of salt
1 large egg yolk, room temperature
1/4 cup of milk, whole or half-and-half works best
1-1/2 tsp of banana extract, real is better than imitation
1/2 tsp of vanilla extract, genuine is always better
1 fairly ripe banana, sliced thin



Combine the sugar, flour and salt in a medium saucepan and blend it together well using a fork. Next, mix the egg and the 1/4 cup of milk together in a small bowl, then add them to the ingredients in the saucepan and mix everything well.  

 

Put the pan over medium heat and slowly bring everything to a boil while stirring continuously. If the mixture thickens before it boils, you don't have to continue bringing it to a boil.  

 

Take the saucepan off the stove. Mix in the banana extract and the vanilla extract and stir well. Pour everything into a large bowl and stir it once in awhile while it cools to lukewarm temperature.  

 

Pour half of the mixture into the chocolate crust and spread it evenly over the bottom. Spread the banana slices out over the top of the filling, and then pour the remaining filling into the pie crust. Cover the pie and chill until cold, usually about two hours or more. 

If you like, you can garnish the top with vanilla wafers, chocolate swirls, or even chunks of Reeses Peanut Butter Cups.
